There's nothing skimpy about the Tex-Mex at Fat Boy's Burrito Co. The burritos nearly burst with signature ingredients, such as the country chicken fingers, mozzarella sticks, and fries found in the Fat Daddy, and quesadillas look more like sandwiches melded together by melted cheese. The made-to-order nachos and bowls, meanwhile, resist the confines of tortillas altogether, letting their guacamole, queso, and blackened chicken mix and mingle on a crunchy mound of chips or a soft bed of rice and beans.
