• Veggie Couscous: Fresh portobello mushrooms, bell peppers, potatoes, caramelized onions, broccoli, and shallots are sautéed in a garlic basil hot sauce and served with steamed couscous.
• Beef Moussaka: Sautéed beef, golden eggplant, mushroom, green peppers, tomatoes, onions, and a fresh tomato sauce are topped with mozzarella cheese and baked. Served with rice pilaf.
• Roasted Lamb Shank: Seasoned lamb shank is roasted in its juices with sautéed potatoes, carrots, broccoli, zucchini, and mushrooms, and garnished with raisins and served with rice pilaf.
