In the heart of Maui's pineapple region, the distillers at Haliimaile Distilling Company create handcrafted, distinctly Hawaiian spirits. Their flagship Pau Maui vodka, for instance, starts with the local Maui Gold pineapples that are so abundant nearby, using the fruit's high sugar content to kick off the fermentation process. The vodka is then distilled in small batches using custom stills, which also give birth to the distillery's whiskey, rum, and flavored vodkas.
