When Downing Barber figured out that the southwestern food he craved could actually be healthy, he had an epiphany. He began to cook furiously, trying to figure out how to make burritos, tacos, quesadillas, and nachos to order using fresh ingredients and no added fats or preservatives. When he felt confident enough, he opened his first quick-serve southwestern eatery and named it Barberitos.

Each Barberitos—now a national franchise—still makes every meal to order using produce that's delivered to the restaurant fresh every morning, as well as quality proteins such as all-natural chicken and organic tofu. For those who are especially conscious about what they eat, Barberitos offers a special menu of dishes that are all under 300 calories and 7 grams of fat.
