At Avatar, he creates his signature Indian cuisine in healthy on-the-go versions. The menu at his three locations features the staples that he's known for—like tandoori chicken with curry or rice and pulao curry bowls—in casual environments that are accessible to everyone, from heads of state to heads of made-up states.
