But the kitchen's approach to spices is more about complexity and subtlety; most dishes can be prepared to be as hot or mild as the diner or their royal food-taster prefers. Even without a custom order, there's plenty of diversity on the menu, from chicken saag with lightly spiced spinach, to lamb in hot, tangy vindaloo sauce.
