While making small donuts, Beavers Donuts Food Truck does big things. The mobile team mixes fresh dough each morning, and waits to fry the bite-size donuts until the moment each customer places an order. Thanks to their mini size, the donuts fry up fast, giving the Beavers team plenty of time to customize them with a variety of toppings that range from classic cinnamon sugar to more indulgent combinations. Take, for example, the Good Morning, topped in honey, peanut butter, and banana slices, and the Rock Star, smothered in Pop Rocks and strawberry sauce, which has a shelf life of 27 years.

There's likely a crowd wherever the truck goes. Beavers Donuts Food Truck, which also serves imported coffee and donut milkshakes, has garnered positive press from the likes of Chicago Reader and Thrillist, which named it one of the nation’s 20 Best Food Trucks. In addition to the three trucks, Beavers now serves its mini creations from a location at Chicago French Market.
