The newly opened location of Brian's Shave Ice looks like a reimagined original—the interior mimics the bright, tropical colors of the original Brian's, but with a contemporary design that is wholly unto itself. There, the sweet sauces—made from sugar cane flown in from Hawaii—decorate spheres of fine snow crafted using ice shavers from Japan. Their more than 30 flavors have included watermelon and rice cake. Patrons can opt to fill their ice balls with azuki beans, creamy dollops of ice cream, or mochi—a dulcet rice paste that assumes a pleasant chewiness when chilled.
