Brownstone Bagel & Bread Co makes its bagels the old-fashioned way. That is, the shop's bagels aren't produced by a machine or spit out by a 3D printer, but hand-rolled into their thick, not-entirely-perfect shape. They're dipped into a boiling malt solution, and then placed on a stone hearth to cook. This labor of love, combined with high-quality flour, gives Brownstone's bagels the chewy consistency that New York bagels are famous for. Not surprisingly, the shop makes its own specialty spreads from scratch, too, including cured gravlox. It also dishes out other fresh eats, including egg sandwiches, fruit salads, and freshly squeezed orange juice.
