Tucked inside the venerable Flamingo Las Vegas, Center Cut Steakhouse looks back to the casino's 60-year history while keeping its feet firmly in the 21st century. While the black-and-white decor, for instance, is decidedly retro, plasma screen TVs posted throughout the space flash photo montages that date back to the 1940s. And the food combines past and present as well, with classic thick-cut steaks and racks of lamb headlining a menu that also includes more modern dishes such as coconut shrimp. A filet ordered "Oscar-style," meanwhile, combines the best of dishes of all time—steak and lobster—while preventing diners from having to choose one or the other by shaking a Magic 8 ball.
