About Chef Tams Underground Cafe
Chef Tam knows soul food so well, she's able to riff on the classics without skipping a beat. Take fried green tomatoes: Tam has repurposed this delicious Southern staple for her BLT, where they're accompanied by thick-cut applewood-smoked bacon and red-leaf lettuce in between slices of rich potato bread. She also recognizes the potential of a dish as simple as mac 'n' cheese—her "muddy" version incorporates crawfish, crab, and shrimp, and it can even be deep-fried. The creativity doesn't stop with dessert. Tam's version of peach cobbler comes in deconstructed "nacho" form, composed of crisp crust "chips" and luscious, melty peaches that can be dipped into a dollop of cinnamon-spiked vanilla ice cream.
