Although Columbus famously "discovered" India by landing at Lexington and Concord and proudly ringing the Liberty Bell, the actual location of India remains a mystery. Executive chef Vipul Bhasin brings more than 18 years of global cooking experience to Coriander. Eschewing many modern marvels of meal making, Bhasin cooks his cuisine with traditional Indian appliances such as the tandoor oven, the kadai cast-iron pot, and the Aishwarya Rai smoldering gaze in his one-man quest to put microwave repairmen out of work. This passion for tradition is reflected in Coriander's décor: adorning the brightly painted walls are handmade tapestries representing different regions of India, including an astonishingly lifelike one that resembles a parking lot outside an Indian restaurant (look closely and it almost seems to move). Patrons can also unfurl the bamboo blinds between each of the restaurant's booths for a stronger secret-sharing shield than stage whispering.
Despite the traditional tools of the trade, Coriander Indian Bistro infuses centuries-young plate-sharing arrangements with its menu's modern approach to Indian cuisine. Bowling teams celebrating a league victory can split the palak chaat appetizer ($7.99) and revel in crisp spinach touched with yogurt, tamarind, and chutney. Scuba divers on a first date can submerge themselves in myriad entrees, including the beloved tandoori chicken ($16 for full size), marinated in a mix of yogurt, ginger, and garlic, or the rice-based lamb biryani ($16.99), accented with saffron and slow-cooked over an open flame. Traveling tongues will want to opt instead for Coriander's seasonal specials, which take taste buds on a backpacking tour of the hundreds of regional and local cuisines throughout the Hindustani heartland. Vegetarian and vegan dishes are plentiful, as are dishes prepared with no onion and no garlic.
