About Courageous Bakery and Cafe - Elmhurst
When Kathryn Pekarik was diagnosed with non-Hodgkins T-cell lymphoma, her sister Laura baked 250 cupcakes for a benefit held in Kathryn's honor. Their friends and family members clamored for more, prompting Laura to start the Cupcakes for Courage food truck. Since first hitting the road in the Green Machine, their four-wheeled cupcakery, they've been featured on NBC 5, the Food Network series Cupcake Wars, and in the dreams of customers everywhere.
But even the truck wasn't enough to satisfy Chicago's cupcake cravings. So the following year the business expanded into the brick-and-mortar Courageous Bakery and Cafe, where they also sell fresh-baked cupcakes in decadent flavors such as chocolate-bacon beer and taffy apple. In addition to that, diners can get croissants, scones, and hand-cut donuts, as well as a full breakfast and brunch menu until 2 p.m. A portion of their proceeds benefit cancer charities, including the Leukemia and Lymphoma Society that's so close to the Pekarik sisters' hearts.
