During five-hour Competition BBQ Cooking classes, novice grillers gather together for tutelage from accomplished barbecue chef Jim Modesitt, who infuses modernized San Francisco barbecue with old-school Southern influences. The chef takes students through the basics of cooking meats in grills and barbecue smokers, helping them to master firing up embers with wood, charcoal, and bottle rockets. Pupils learn to how to flavor protein cuts with injections, dry rubs, sauces, and marinades before digging in to their finished products, which may include baby-back ribs, pulled pork, and shrimp. Classes run from 11 a.m. to 4 p.m. and a currently scheduled session takes place on Sunday, June 10—additional classes will be added. Check the schedule for the current line-up.
