Cave B Inn and Spa is so intertwined with its rocky scenery along the Columbia River Gorge that the entrances to some of its rooms are cave-like, made of walls of basalt. Orchards and wineries span the property’s hundreds of acres, which were designed to blend seamlessly with the landscape. Each day, the Tendrils Restaurant staff gathers fresh fruits and herbs from the estate’s orchard and gardens to season dishes that feature organic meats and cheeses from local farms.

Quincy, Washington: Skiing and Small Town Shops Along the Columbia River Gorge
Follow the Columbia River north through Central Washington State, and you’ll find Quincy—a small city removed from the bustle of Spokane or Seattle. Instead of towering skyscrapers, it’s basalt cliffsides that draw people in to Quincy, which has one of the most scenic viewpoints along the Columbia River Gorge. In warm weather, crowds fill up the Gorge Amphitheatre, which has featured shows by Dave Matthews Band, Bruno Mars, and more. When you’re not catching a show or snapping pics of the scenery, you can hike through pine forests and trudge over boulders that jut out of the rushing river banks, or go fly fishing for steelhead trout and bass on the Columbia. Winter brings crowds of skiers about 45 minutes north to nearby Wenatchee’s MIssion Ridge, which has three dozen exhilarating ski runs along the Cascade Mountains. One of them has a vertical drop of more than 2,200 feet.
There’s nothing terribly flashy about the towns and cities that surround Quincy, and that’s just how the residents like it over there. You can spend your leisure time hunting for vintage treasures at antique malls, or taking in live dance and arts exhibits.
