Peru’s capital city is known for its wide-ranging culinary scene. Not only Spanish but also Mediterranean, African, and Chinese influences color the food you can sample here. Must-tries include ceviche (since Lima is located on the Pacific coast, the city gets lots of fresh seafood) and a street food called anticuchos, or grilled beef heart.

One of the greatest architectural achievements of the Inca Empire, Machu Picchu was occupied for only 100 years before Spaniards conquered the ancient civilization in the 16th century. After that, the city lay hidden until 1911, when an American historian brought it to the world’s attention. Today, visitors can wander the complex maze of stone terraces, residences, and religious temples built high in the Andes Mountains.
