Start the vacation off in Reykjavik, the world’s northernmost capital city. Surrounded by snowy peaks, it’s known for its gorgeous scenery and wild nightlife. After your dose of northern lights and fermented shark, make your way to Amsterdam. Walk along glistening canals, snap pics of century-old windmills, and visit one of the year-round markets. Stop at the Rijksmuseum to admire masterpieces by Rembrandt and Vermeer, or head to the Bloemenmarkt for flower bulbs and stems galore, including the one that made the Netherlands famous: the tulip.

- Gulfloss* is about an hour and a half from Reykjavik, but it's worth the journey. These white-capped falls cascade down two ledges surrounded by carpeted green hillsides.
- Explore scenic canals and stop by art galleries and shops in the Jordaan neighborhood, a chic shopping and dining location known for its trademark rowhouses.
- The Van Gogh Museum is home to the largest Van Gogh collection in the world. Work your way through the exhibits to follow the arc of the artist's life—but go early if you want to skip the large crowds.
