Coconut Bay Beach Resort and Spa is a water lover’s wonderland. The only resort in Vieux Fort, the island's main point of entry, boasts towering water slides, four pools, and a lazy river—all surrounded by the Caribbean Sea. You might spot honeymooners sipping cocktails on the beach at one end of the resort and kindergarteners learning to swim on the other. With clearly divided adults-only and family-friendly wings, the hotel deftly caters to a diverse crowd.
All-inclusive packages cover all meals at any of the resort's five restaurants, including Coconut Walk, a sprawling buffet with internationally influenced cuisine. At the more upscale Silk, chefs prepare Mandarin-inspired dishes using local Caribbean ingredients (reservations recommended). There are six bars spread throughout the resort, including a swim-up pool bar and the wooden-shingled Adult Bar, a vibrant clubhouse built around a live tree. Garden-view rooms face the tropical gardens on the ground level of the kid-friendly Splash wing. For more expansive views, book one of the ocean-view rooms, which take up the hotel's top floors and overlook the shore from private balconies. The beach is a premier spot for sunbathing and making sand angels. Steady winds create excellent kitesurfing conditions, and Coconut Bay Beach Resort offers introductory lessons.
St. Lucia: Mountainous Caribbean Island with Abundant Greenery
St. Lucia’s terrain is dominated by forested mountains and lush valleys. Because of Coconut Bay's location on the island's southern tip, the attractions are nearby and only accessible by car. The resort can arrange a variety of tours by land and sea to showcase nearby natural treasures, including the towering twin Pitons, volcanoes that tower over the town of Soufrière, about 30 miles to the west. The second-largest settlement on the island, Soufrière is well-known for its drive-in volcano, which you can literally pass through with your car. Additional tours include rainforest nature walks and jeep safaris, which traverse along hidden trails past rural villages and banana plantations.
