The event will be held at the rooftop garden perched atop Eco Collective, an oasis for Chicago’s legions of self-professed “locavores.”
Please bring two glass quart jars with lids to transport your kimchi.
Each event is capped at 14 purchasers.
What You’ll Do
Spicy. Sweet. Garlicky. Kimchi is a chameleon of flavors, blending in seamlessly with nearly any meal. Join herbal alchemist and manager of Edible Alchemy Foods Co-operative Andrea Mattson for a crash course on preparing the fermented Korean dish. After sampling several varieties, you’ll experiment with traditional and non-traditional ingredients from local farmers. At the end of the lesson, you’ll leave with jars of your very own customized kimchi, which you can ferment at home for one to three weeks.

Andrea Mattson likes to know everything she can about the food on her plate. With her finger on the pulse of Chicago’s locavore movement, Mattson cultivates relationships with new and existing local farmers, which bolsters her role as the manager of Edible Alchemy Foods Co-operative. She is also a member of the Eco Collective in Pilsen, where she hosts workshops and community events that share her passion for gardening, cooking, and medicinal herbs.
