The aroma greets diners as soon as they enter India Oven: an enticing intermingling of coriander, ginger, garlic, saffron, and garam masala. These are a just a few of the spices that draw especially inventive perfumers and add authentic flair to dishes from virtually every corner of India. Representing Southern traditions, the chefs create crepe-like masala dosas filled with potatoes and onion. They also use the North Indian method of cooking in a clay tandoor oven, baking dishes ranging from pillowy naan to chicken marinated in a fragrant blend of yogurt and spices.
