Fried vegetable fritters bask in tomato sauce stewed with ginger and garlic; cardamom, cloves, cumin seeds, and cinnamon temper the heat of spicy lamb; and golden threads of saffron appear in each biryani entree. Even the kitchen's charcoal-fired tandoor oven imparts its own flavor, lending a distinctive smokiness to everything from chicken to house-made cottage cheese marinated in mint-tinged yogurt.
