• History of Noodles Panini: In 1896, in Italy's Puglia region, son of Nunzio, creator of the Panini, which was invented when Nunzio laid some grilled eggplant and fresh goat cheese between two slices of focaccia bread he pulled from the oven. 6-year-old Giuseppe Jr. left his home in 1902 and served the well-heeled citizenry of Boston at his father's grocery store. He was interested in making and sampling pasta to spaghetti, his passion earned him the nickname "Noodles". Along with his family, around the dinner table and around the drawing table, he designed a sandwich and pasta place, which he named Noodles Panini.
