Nearly everything on the menu requires the chefs' artful frying and seasoning skills, from the crispy chicken and fried fish fillets to hush puppies, onion rings, fried okra, and more. Nu Wave uses catfish, swai, perch, tilapia, and other fresh seafood—shrimp, sold by the pound or by the piece, is the latest addition on the long-running joint's menu.
