A Paris-based sushi hub, Planet Sushi enhances traditional Asian fare with French techniques, sating sushi purists with a menu that brims with fresh, never-frozen fish. Condition palates for the main event by noshing on predinner snacks such as the crunchy coconut shrimp ($9) or the spinach salad, which comes glazed with salmon teriyaki and garnished with apple vinaigrette ($6.50). The 24-piece California Mixed plate blends an assortment of salmon, baked tuna, and surimi sushi ($16), and underwater gardeners out of season can indulge in the Planet Veggie, which dons a lush spread of vegetarian california rolls, vegetable tempura, miso soup, and more ($15).

Meanwhile, marine minimalists can wrap their chopsticks around two-piece offerings such as shrimp ($4), eel ($5), avocado/cheese ($4.40), and lump fish eggs ($5). Then cleanse palates for another round of raw fish with a bottle of pinot grigio ($24) or sake Ginjo ($16 for 10.2 oz.), or indulge in a dessert such as banana tempura with ice cream ($7).

TVs are spread throughout the restaurant, giving the diner a live look at the chefs honing their culinary craft.

About Planet Sushi

French entrepreneur Siben N’Ser founded the first Planet Sushi in Paris in 1998. Its combination of sculptural cuisine and sleek, modern interior design quickly caught on. Within a few years, he had built sister restaurants in Miami Beach; Ibiza, Spain; and in a handful of towns across France. At the Miami location, purple lights lend a nightclub vibe to the dining room, where guests can watch the chefs work via several flat-screen TVs. Creative maki such as the crab- and asparagus-filled crunch salmon roll radiate color from plates. Starters such as tuna-avocado tartare brim with French influences, and desserts such as lemon sorbet celebrate Florida’s famous citrus. Chefs also shape whimsical specialty dishes such as the Planet Sandwich, which stuffs spicy tuna, American cheese, and avocado between triangular slices of “bread” made from rice.

Guests seeking an extra-romantic atmosphere can toast glasses of sake in a private room or head to the patio to reshape tuna maki into hearts beneath the stars. Alternatively, a fleet of scooters delivers most of the menu to homes and offices.
