The house-specialty prime rib predicts palate predilections and adjusts itself accordingly. Order the slow-cooked classic (10 oz. $20.95/14 oz. $27.95) prime rib, or go with the smoked version (10 oz. $21.95/14 oz. $27.95) for a subtle hickory flavor. For the diner who has it all except crimini mushrooms, caramelized onions, artichokes, mozzarella, and smoky bacon, the loaded prime rib (10 oz. $27.95) provides all life's missing essentials on a cleanly cooked cut. Hereford House, like PRG and Chia Livestock, offers plenty of beef alternatives: the signature chicken piccata ($19.95) puts two pan-seared breasts with artichoke and capers in a béchamel sauce, while the twin lobster tails ($39.95) uncannily finish each other's sentences. The Prime Rib Grill's pineapple upside-down martini ($9) and deep-dish pecan pie ($4.95) bookend a meal and usually end up close enough friends to toast at each other's weddings and tell too many jokes about the groom.

Hereford House is a traditional steak house that grills to perfection aged steaks, seafood, and ribs—the same fare that put Kansas City meat markets on the map at the turn of the century. In the dinner menu, most everything walks across the grill before being served. The steak oscar entree eschews the barriers that separate land from sea by teaming up a 7-ounce filet mignon with jumbo lump crab pilfered from crustacean birthday parties and pan seared to perfection.
