About Spruce Farm & Fish
From its setting in a Boulder landmark to its menu of locally sourced ingredients, Spruce Farm & Fish is a quintessential Colorado restaurant. The chefs whip up dishes including the braised Colorado lamb shank with risotto and the Beelers Farm pork tomahawk with poached apple and brussels sprout hash. It makes its home in the Hotel Boulderado. The hotel, which is located on the National Register of Historic Places, opened in 1909 and has played host to such notable guests as Helen Keller, Douglas Fairbanks Sr., Robert Frost, and Louis Armstrong. Spruce opened here in 2014, bringing with it a brand-new oyster bar.
It partners with sustainable oyster farms and fisheries. Spruce uses local ingredients whenever it can (see: braised Colorado lamb shank), but it is located in a landlocked state, which means that it has to import its oysters. So it works with sustainable farms and fisheries on the East and West coasts and flies oysters in every day.
