Foundry's executive chef Eric Greenspan’s boast-worthy background (he’s honed his culinary skills alongside Michelin-acclaimed chefs such as David Bouley and Ferran Adria of El Bulli) is undoubtedly responsible for the Foundry’s inventive, rotating menu. The refreshing salad of crisp snap peas and long beans, dressed with green goddess vinaigrette and peaches, is perfect for a first course or as a companion on a long road trip to Denver. Move on to a lemon béarnaise–drizzled Alaskan halibut or try the chef’s tasting menu. Recent menu items include roasted black cod with garbanzo beans and scallop ceviche kicked up with jalapenos.
Former Patina sommelier Chris Meeske put together the Foundry’s well-edited wine list with very sensible prices that make lots of sense. Expect to find yummy selections from less prestigious regions that won’t blow the budget.
