Head chef Angelica Valencia helms the kitchen of the family-run restaurant, delving into her own mother's recipe books to bring authentic flavors to the hungry, adoring public. If she forgets what spice comes next, or if the monster truck that smashes avocados is in the shop, Angelica doesn't have to go far for an answer—her mom, Elvira Gomez, works right alongside her as TNT's master cook. Along with Angelica's skill and Elvira's 70+ years of cooking experience, the kitchen is staffed by cuisine chef Dolores Cazares. Together, the trio produces hot, medium, and spicy tortas; seasonal soups; breakfast quesadillas and chilaquiles; and a bevvy of seafood dishes that ranges from fish tacos to raw oysters.
