The pièce de résistance of their Instagram-worthy menu is the red gurnard—the head of this bright, peculiar-looking fish rests atop a column of bamboo sticks, its large pectoral fins loosely furled as if in mid-swim. It holds court over a bowl artfully packed with julienne veggies, herbs, flowers, and sashimi cut from the fish itself. With other entrees, such as sushi plates, condiments aren't relegated to ramekins, but instead painted into butterflies and flowers that frame the rolls.
