If Swanson were a real person and not a famously breakfast-loving TV character, his favorite restaurant would probably be Whisk Chicago.
That's because Rick and David Rodriguez, the brothers who opened the brunch-and-burgers joint in June 2014, love breakfast just as much as Swanson does—in fact, they heap plates with decadent pancakes, loaded omelets, and other brunch specialties until 5 p.m. each day, long beyond typical brunch hours. Even after the clock strikes 5, diners can order burgers "breakfast-style" (think juicy patties nestled between slices of French toast rather than buns). A BYOB policy—and the fact that a Mariano's stands across the street—ensures that diners can pair their brunch or burger with their favorite libation.
We talked to chef-owner Rick Rodriguez about the inspiration behind Whisk.
Groupon: Is it true that Whisk was inspired by Parks and Recreation character Ron Swanson?
Rodriguez: "That's right. My brother loves Parks and Rec, he got me addicted to the show. We love Ron Swanson—that’s where we got the 'breakfast for dinner' concept."
G: Do you think Nick Offerman, the actor who plays Swanson, has heard about it?
R: "We actually met [Offerman] a week ago. He was at Second City doing a book signing. . . we brought him 10 pounds of bacon and French toast, and told him about the restaurant. He loved it.”
G: What would a real-life Ron Swanson order if he came to Whisk?
R: “All of the bacon and eggs. [And] the Ron Swanson burger. It’s an eight-ounce patty. We wrap in one pound of bacon and top it with bacon mayo.”
