With other dishes, such as the bulgogi bowl and the Veggie Roll—made with asparagus, avocado, cucumber, and pickled daikon—he betrays inspiration culled from Korean food, especially its fermented vegetables like kimchi. By introducing these worldly flavors into the restaurant's menu, he gives traditional Japanese cuisine an unconventional twist, pushing its noodles, bento boxes, and sushi into the realm of delightfully modern and unexpectedly unique.
